Bologna Cake To Make Much Anticipated Debut At Yale Bologna Festival [PHOTOS]

YALE (WWJ) - The city of Yale is full of bologna this weekend for the 28th annual Yale Bologna Festival.

It's a celebration of all things bologna! There's fried bologna, bologna on a stick, bologna spread and more. But one item that people are raving about this year is the new bologna cake. Creator Gerri Armstrong described it as an hors d'oeuvre cake made from Yale's famous C. Roy's bologna.

"There's layers of bologna with cream cheese spread in between it. Some yummy flavors," Armstrong told WWJ's Scott Ryan. "We also layer some cheese in there and it comes out looking like a regular cake. We frost it with some whipped cream cheese and then we decorate it with some spray cheese and decorate it with some of our bologna, we have bologna sticks with cheese in them and we have bologna hot dogs. It looks beautiful!"

Armstrong said the cake is best served with crackers or alongside another favorite Yale treat: Bologna spread.

"Oh it is delicious," she said. "It is ground bologna with pickles and miracle whip and there is a secret ingredient in it -- I'm not sure what it is but it sure does make it taste pretty good."

And if you want a little variety with your bologna, no problem.

"It's our first year for the bologna cake so we're exploring a little bit," said Armstrong. "We're doing some with sprinkling onion in between the layers, we're doing some green onions, we're doing some with the bologna spread and the cream cheese and the regular cheese in between, and we're doing some sprinkling in between with some avocado, some with pickles. We're just testing the waters to see what everybody likes."

So, what's the deal with all of the bologna? The deli meat has a long tradition in Yale, which was settled by German, Polish and Irish immigrants in the early 1800's. Bologna was first sold in Yale in 1906 from a small shop downtown and the city has carried on the practice ever since.

Yale plays host to the Bologna Festival every July. The 3-day weekend event closes the streets and transforms the small community of just under 2,000 residents to a gathering of over 20,000 bologna starved party-goers. The festival -- which takes place July 29, 30 and 31 -- includes such events as the famed outhouses races, a street dance, parade, fireworks and crowning of the King and Queen of Bologna. Yale is located about an hour-and-a-half north of Detroit.
