Executive chef Craig Myrand has been with Roberts Restaurant Group for over four years, and has been the chef of Bill's since it opened a year ago. He is a twenty-one-year veteran of the food industry and has worked at several metro Detroit restaurants including Steve and Rocky's, La Bistecca and The Dearborn Inn. He specializes in French and Italian cuisine. The menu showcases the knowledge and technique he has learned from the various chefs he studied under along the way.

Soft Polenta
  • 1 cup   Milk
  • 3 cup   Chicken Stock
  • 3 cup   Water
  • ¼ cup  Butter
  • 2 cup   Corn Meal
  • 1 Tbl    Kosher salt
  • ½ cup  Parmesan (shredded)
  • 1 tsp    Fresh ground pepper

Directions:

  1. Bring the milk, chicken stock, water and butter to a boil in a sauce pot.
  2. Sprinkle in the corn meal, salt and pepper. Whisk continuously until the corn meal is dissolved into the boiling liquid.
  3. Bring back to a boil, then reduce to a low flame and stir often for 20 minutes.
  4. Add the Parmesan off of the stove and serve.
Bolognaise Sauce

The Bolognaise sauce can be served over the soft polenta or your favorite noodles.

  • 1/3 cup    Extra Virgin Olive Oil
  • ½ cup     Ground Garlic (fresh)
  • 2 cup      Onion (small diced)
  • 1 cup      Celery (small diced)
  • 1 cup      Carrot (small diced)
  • 2 Lbs      Ground Sirloin
  • ½ Lbs     Ground Pork
  • ½ Lbs     Ground Veal
  • ¼ cup     Kosher Salt
  • 2 Tbl       Fresh Ground Pepper
  • 2 qts       Canned Tomato
  • 2 cup      Ground Tomato
  • ½ cup     Fresh Basil (chopped)
  • ½ cup     Fresh Italian Flat Leaf Parsley (chopped)

Directions:

  1. Heat olive oil in a medium-sized sauce pot.
  2. Add garlic and sauté until golden brown. Quickly add the onion and celery. Stir to ensure the garlic does not burn.
  3. Add the ground beef, pork, veal, salt and pepper. Occasionally stir with a wooden spoon to keep it from clumping up until the meat is cooked through.
  4. Strain the fat out of the pan.
  5. Add in the canned tomatoes and simmer for 15 minutes.
  6. Remove from the flame and stir in the fresh basil and parsley.
